L’HISTOIRE DU MOCHI<\/span><\/h3>\n

L’histoire du mochi remonte \u00e0 l’\u00e9poque de l’Ancien Japon, o\u00f9 il a d’abord \u00e9t\u00e9 fabriqu\u00e9 en tant qu’aliment rituel.\u00a0
Le riz, consid\u00e9r\u00e9 comme un don de la nature, se retrouve souvent dans de grandes occasions au Japon comme le Nouvel An ou l’\u00c9quinoxe de printemps. Le mochi a \u00e9t\u00e9 con\u00e7u dans le but de purifier et sanctifier le riz, en pensant qu’il apporterait la fortune et la sant\u00e9 \u00e0 ceux qui le mangeaient. Consid\u00e9r\u00e9 alors comme un aliment sacr\u00e9, il prenait place dans diverses c\u00e9r\u00e9monies religieuses.\u00a0<\/p>\n

Au fil du temps, le mochi est devenu de plus en plus populaire, devenant un aliment de base au Japon, consomm\u00e9 aux petits-d\u00e9jeuners ou comme en-cas. \u00c0 partir de ce moment-l\u00e0, le mochi a commenc\u00e9 \u00e0 prendre de l’ampleur et \u00eatre revisit\u00e9 de diff\u00e9rentes fa\u00e7ons : ajout de saveurs et de garnitures, diversification, version sal\u00e9es…\u00a0
Gr\u00e2ce \u00e0 son go\u00fbt l\u00e9ger, le mochi se marie facilement \u00e0 d’autres saveurs. Tr\u00e8s pris\u00e9 lors des c\u00e9r\u00e9monies du th\u00e9, le mochi accompagne tr\u00e8s bien le pencha (th\u00e9 vert en feuilles) et le matcha (en poudre). \u00a0<\/p>\n

LA FABRICATION DU MOCHI<\/h3>\n

Aliment traditionnel depuis des si\u00e8cles, le mochi est fabriqu\u00e9 \u00e0 partir de riz glutineux de consistance collante avec un c\u0153ur fourr\u00e9 d\u2019une p\u00e2te de haricots rouges ou blancs. Il peut \u00eatre d\u00e9gust\u00e9 nature, mais il est \u00e9galement possible d’int\u00e9grer des ingr\u00e9dients comme le matcha, le s\u00e9same noir ou encore le yuzu.\u00a0<\/span><\/span><\/p>\n

La m\u00e9thode traditionnelle de fabrication n\u00e9cessite des comp\u00e9tences et de l’exp\u00e9rience avec une forte intensit\u00e9 de main d’oeuvre. Effectivement, une fois que le riz gluant est cuit \u00e0 la vapeur, il doit \u00eatre pil\u00e9 \u00e0 l’aide de gros maillets en bois dans un grand mortier au nom de \u00ab\u00a0usu\u00a0\u00bb. Pendant qu’une personne pile le riz, un autre le retourne et ajoute de l’eau pour le maintenir humide. Un vrai travail d’\u00e9quipe et de coordination !
Il est n\u00e9cessaire de maintenir l’endurance pour acc\u00e9l\u00e9rer la cadence jusqu’\u00e0 ce que le riz forme une p\u00e2te suffisamment \u00e9lastique.<\/p>\n

LA CR\u00c8ME GLAC\u00c9E, LE COEUR TENDANCE DES MOCHIS\u00a0<\/h3>\n

Une innovation culinaire a r\u00e9volutionn\u00e9 le monde des desserts et c’est bien entendu le mochi glac\u00e9 !
Rapidement adopt\u00e9 au Japon et dans d’autres pays asiatiques, le mochi glac\u00e9 est devenu un incontournable des \u00e9tals de confiseries et des menus de restaurants. La popularit\u00e9 de cette gourmandise a alors travers\u00e9 les fronti\u00e8res pour conqu\u00e9rir les papilles des amateurs de sucreries aux quatre coins du globe !\u00a0<\/p>\n

Une premi\u00e8re version des mochis glac\u00e9s a \u00e9t\u00e9 produite par une entreprise d’agroalimentaire cor\u00e9enne, Lotte Group, en 1981. La p\u00e2te de riz gluante \u00e9tait remplac\u00e9e par de l’amidon de riz, et la cr\u00e8me glac\u00e9e par du riz au lait.\u00a0<\/p>\n

Une dizaine d’ann\u00e9es apr\u00e8s (1993), la version moderne du mochi glac\u00e9 fut cr\u00e9\u00e9 par Frances Hashimoto, ancienne PDG de Mikawaya, confiseur am\u00e9ricain. Ce fut la premi\u00e8re \u00e0 entrer sur le march\u00e9 nord-am\u00e9ricain avec le mochi glac\u00e9.
Il est vite devenu populaire aux \u00c9tats-Unis et par la suite s’est r\u00e9pandu \u00e0 l’international, le d\u00e9clinant par la suite en sept parfums diff\u00e9rents.\u00a0<\/p>\n
